Cauliflower Crumbles

Next time you want to add a little garnish to your salad, or use a low-fat/cal substitute for a vegetable or casserole topping, try adding crumbled cauliflower. No need to cook.

Simply shred raw cauliflower into crumbles with the large hole of your cheese grater, or use a food processor. Note: the crumbles will toast nicely in the oven, (like breadcrumbs), when tossed with a smidgeon of olive oil.

You can also cook the crumbles and serve as a substitute for rice. See recipe for Basic Cauliflower Rice.
