Mashed Cauliflower

Wonderfully rustic-creamy! This portion serves 2.
1½ c. small cauliflower florets
1 Tbsp. butter
¼ c. warm vegetable or chicken stock
Salt and pepper
Steam the cauliflower until very soft– about 15-20 minutes. Remove from steamer and toss with butter and stock. Mash with a potato masher (or you can use a handheld blender, or a food processor). Add a little more stock if needed. Season with salt and pepper.
Delicious Variation:
Substitute 1 Tbsp. olive oil for butter; add 1-2 Tbsp. shredded parmesan cheese and 1-2 tsp. snipped fresh dill and/or chives. Drizzle in a little more stock if needed to get to your desired consistency.
