Super-Simple Cauliflower Gratin


This is so easy and so yummy! Recipe serves 2.

1½ - 2 c. small cauliflower florets

1 Tbsp. butter

1 Tbsp. plain yogurt (or sour cream, or heavy cream)

Salt and pepper

1/3 c. shredded cheddar cheese

3 Tbsp. lightly toasted bread crumbs

Preheat broiler. Butter/grease a small, shallow baking dish.

Steam cauliflower until firm-tender, about 3-5 minutes. Remove from steamer and toss with butter and yogurt in a bowl while still warm. Season with salt and pepper to your taste. Tumble the cauliflower out into the baking dish and arrange single layer.

Combine cheese and bread crumbs, and sprinkle evenly over the cauliflower.

Place in oven under broiler for 3-4 minutes, or until warm and melty-- and bread crumbs are crispy.

Mini Food Processor tip for having breadcrumbs on hand:

My mini food processors (yes, I have two!) are among my most used kitchen tools.

I use one or both almost every day.

When you have a stray bread heel or last piece or two on the loaf, throw in a mini food processor, then put crumbs into an airtight container and freeze.

For Lazy-Liz toasted crumbs, I put a piece of bread in the toaster and then put it into the mini food processor –done!
