Asian Carrot Slaw

A yummy matchstick-cut carrot slaw.
1/2 bunch carrots, cut into matchsticks
2 tsp. fresh lime juice
2 tsp. toasted sesame oil
1-2 tsp. tamari sauce
1 teaspoon honey, or more if you like it sweeter
2 tsp. toasted sesame seeds
1-2 Tbsp. snipped carrot tops, parsley, or cilantro
Whisk together lime juice, sesame oil, tamari, and honey.
Drizzle over the carrots and toss well.
Sprinkle with the toasted sesame seeds and snipped carrot tops; refrigerate until ready to serve.
