Cabbage, Apple & Blue Cheese Slaw

This is a wonderfully tangy slaw. Good basic slaw, without the blue cheese.

Combine in a bowl:

2 c. finely shredded green, savoy or Napa cabbage

1 tart apple, peeled, cored, and matchstick/julienne sliced

1/4 c. toasted walnuts

1/4 c. blue cheese crumbles

Whisk together and toss with cabbage mixture:

1 Tbsp. unfiltered apple cider vinegar

1 tsp. lemon juice

1/4 c. olive oil

1 Tbsp. crème fraiche, sour cream, or plain yogurt

Salt and pepper to your taste

*Sometimes I add a drizzle of honey to this dressing.
