Carrot, Apple, and Dried Fruit Salad

This is one of those “recipes” that I doubt I've ever made the same way twice; it’s best made to your taste, and with what you have on hand. Use the basic template below, but feel free to liberally adjust quantities. It is light, refreshing and easy -a great way to use up misc. items, and add wonderful color to your plate.

Combine grated, spiralized, or matchstick-cut carrots (2 cups), diced apple (1 c.), a handful of dried fruit such as raisins, cherries, or cranberries with 1-2 Tbsp. mayo. I like to add a splash of lemon juice and a stir of honey to the mayo. Substitute the mayo with honey sweetened yogurt, if you wish. A few chopped nuts, a diced stalk of celery, chopped radish, bell pepper, and/or a little finely diced green or red onion are all excellent additions.
