Honey Roasted Mint Carrots


These are deliciously sweet and pretty!

2 c. carrot slices (I like about ½” diagonal cuts)

2 tsp. light vegetable oil

Salt and pepper

1 Tbsp. honey

1-2 Tbsp. snipped mint

Preheat oven to 350.

Toss the carrots with oil in a bowl, and season with salt and pepper. Arrange on a rimmed, parchment lined baking sheet and roast for 10-15 minutes, or until the carrots have started to brown.

Remove from oven, return to bowl, and combine with the honey and mint. Serve warm or at room temperature.
