Honey-Caramelized Spiced Cauliflower

A simple stove top side dish, that's slightly sweet and super tasty.

Olive oil

1 scant Tbsp. butter, melted

1 small head cauliflower, cut into florets

1 scant Tbsp. minced onion

1/8 tsp. red pepper flakes

1/4 tsp. sweet paprika (smoked is really good, if you have it/like it)

1 Tbsp. honey

1 tsp. lemon juice

Salt and pepper

Toss the cauliflower in 2 tsp. olive oil and the melted butter, season with salt and pepper and spread into a skillet in a single layer. Saute quickly over medium-high heat without stirring about 2 minutes, until light brown. Flip each piece and lightly brown the other side. Repeat until all sides of the florets are browned, but still firm.

Whisk together 1 Tbsp. olive oil, onion, red pepper flakes, and paprika, and combine with cauliflower. Saute 1-2 minutes, until the onion is soft. Whisk together 1 Tbsp. honey with 1 Tbsp. water and stir into the pan; saute for 1-3 minutes more, until liquid thickens to a glaze. Stir in lemon juice and cook for 30 seconds. Season with salt and pepper to your taste.
