Chocolate Beet Brownies


Ok, these are decadent... but yum!

8 oz. raw beets 8 oz. butter (2 sticks) ¾ cup organic dark brown sugar ¾ cup organic sugar 4 eggs 1 ¼ cup cocoa powder ½ tsp. salt 1 tsp. baking powder 1 T. vanilla ¾ cup all purpose flour 1 cup chocolate chips

1. Steam scrubbed, unpeeled beets (tops removed) for approx. 30-60 min. until very soft. Steam time will depend on beet size. Don’t forget to check the water level below your steam basket several times! Cool just long enough so that you can handle them, then rub skins off. Puree in a blender, and set aside to cool.

2. In a medium pan over low heat, melt butter. Turn heat to medium-low and add both sugars. Stir until the sugar is dissolved, about 2–3 minutes, and remove from heat.

3. Beat the eggs on medium with a mixer for about 2 minutes. Add cocoa powder, salt, baking powder and vanilla extract, and incorporate well.

4. Add pureed beets and butter-sugar mixture and mix well. On low speed, add flour and then chocolate chips, scraping the sides as needed.

5. Spray a 9 x 13 pan generously with cooking spray, add batter and bake 30 minutes in preheated 350 oven, until knife comes out clean or with just a few crumbles. Cool in the pan before turning out onto a cooling rack. Enjoy!
