Great Grandma Natalie’s Farm Beets

The note on her recipe card says “If we have bacon, remember to add it!”
2 Tbsp. butter
2 Tbsp. flour
1 Tbsp. sugar
½ tsp. salt
¼ cup vinegar
¼ cup cream (or ½ & ½)
3 cups grated, cooked beets
1 Tbsp. paper thin, tiny onion slices, or scraped onion juice (optional)
2 pieces bacon, crisp cooked and crumbled (optional)
Melt butter in a saucepan. Whisk together flour, sugar, salt, vinegar and cream, and add to butter. Fold in beets (+onion and bacon if using) and simmer gently for about 5-10 minutes until hot.
Serve warm.
