Green Beans with Crispy Green Onions and Ginger

This is simple, delicious, and has presentation pizazz!

1/2 lb. green beans, trimmed

2 tsp. olive oil

Salt

Peanut oil (or other high-heat oil)

2 green onions, including white and tender green parts, sliced very thinly lengthwise in tiny matchsticks

2 Tbsp. peeled, fresh ginger, cut into tiny matchsticks (make them smaller than the onions)

Steam the beans just until they are crisp-tender. Drain well and toss with olive oil and a dash of salt. Put into serving bowl or platter.

Meanwhile, pour peanut oil 1/8” - 1/4” deep into a small skillet and bring to high heat. A little water dropped in the oil will immediately smack and sizzle when ready. Add the green onions and ginger; cook for 1-2 minutes or until the onions are starting to brown, but are still mostly green. Scoop veggies out of oil with a slotted spoon and place on a paper towel. Pour 1-2 Tbsp. of the onion-ginger oil from the skillet over the green beans, scatter with crispy onions and ginger; season with salt. Serve warm.
