Green Beans with Crushed Pistachios

Makes "plain" green beans special.
1 lb. trimmed green beans
1 scant Tbsp. olive oil
1/2 c. dry roasted pistachios–*toasted and cooled
Ample pinch of paprika (about 1/8-1/4 tsp., to your taste)
Salt and pepper
Prepare a large bowl of ice water. Steam the green beans until bright green and crisp-tender. Immediately dip the steam basket with the beans into the ice water for a few seconds and then drain thoroughly. Pat dry, place in bowl and gently toss with the olive oil.
Combine pistachios, paprika and a dash of salt and pepper in a food processor until very finely ground. Sprinkle over the green beans and serve at room temperature.
*To toast the pistachios, spread out nuts on a baking sheet. Bake in a preheated 325 oven for about 5-10 minutes. Check at 5 min. —nuts should be just slightly golden.
Or you can simply toast on the stove top in a dry pan (but watch carefully!)
