Grilled Beans with Lemon Basil Vinaigrette

A really refreshing way to enjoy summer beans!
1 lemon
½ clove garlic, pressed or minced
Olive oil
Salt and pepper
½ lb. green and/or yellow beans, trimmed
¼ lb. fresh, whole mozzarella
¼ c. fresh basil leaves, snipped or cut into thin chiffonade ribbons
Prepare grill to medium-high.
Cut lemon in half. Squeeze juice from one half into a small bowl. Set aside.
Leaving peel on, cut the other half into thin slices, then finely chop all. (Peel will add a nice touch of bitterness). Add chopped lemon, garlic, and 2 Tbsp. olive oil to the lemon juice and season with salt and pepper.
Toss beans with a little olive oil and season with salt and pepper. Place in grilling basket and grill for about 1 minute, until they’re lightly browned and crisp-tender. Transfer to bowl.
Tear/shred the mozzarella into random, bite sized pieces and toss into the beans along with basil. Drizzle with the vinaigrette and serve.
