An easy meal full of spicy goodness!
1 Tbsp. olive oil
1/2 - 3/4 lb. green beans, trimmed and cut in half
1-2 cloves garlic, minced or pressed (amount to your taste)
1-2 jalapeno peppers, cut into thinly sliced rings (amount to your taste- or use sweet peppers if you don't like it spicy)
Salt and pepper
1 lb. large uncooked shrimp, peeled and deveined
1 tsp. chili powder (or substitute curry powder for an Indian flair)
2 Tbsp. lime juice (+ a bit more if desired)
Cooked jasmine rice
Snipped parsley, carrot tops, or cilantro for optional garnish
Saute the green beans, garlic and peppers in oil until beans are just barely crisp-tender (1-2 minutes, depending on type/quantity/size of beans). Season with salt and pepper. Season the shrimp with chili powder, salt and pepper and add to the skillet. Cook until opaque, about 3-4 min.
Stir in lime juice and serve over cooked rice; garnish as desired.
