Storage
Store unwashed, untrimmed beans inside a plastic bag in the refrigerator. Whole beans stored this way should keep for about 5-7 days.
Note about purple beans: they will turn green when cooked, so if you want to show off their beautiful color, enjoy them raw.
Freezing
Blanch (put beans in a sieve and dip into boiling water for 1-2 minutes) or steam (about 2 minutes) the green beans. Remove from heat, dip into very cold water immediately, drain, and then allow them to cool thoroughly. Lay onto a towel on the counter to dry. Place, single layer, on a rimmed baking sheet and freeze about an hour. Then transfer them to freezer bags and freeze. Use within 3-6 months for best nutritional value.
