Cherry Tomato Caprese

1 c. cherry tomatoes, halved

Olive oil

Salt (if you have fleur de sel or Maldon, now would be a great time to use it)

Several small balls, cubes, or pieces fresh mozzarella

Snipped basil leaves

Baguette slices, soft or lightly crisped

Combine tomatoes, 1 Tbsp. olive oil, and a good dash of salt in a small bowl. Let stand for 10-15 minutes, stirring occasionally. Juices will release from tomatoes. Arrange the now saucy tomatoes onto plate with the cheese, and sprinkle with basil leaves. Serve with baguette for a tasty lunch!
