Many Greens Shredded Salad

A salad using a combination of whatever greens you have on hand is really tasty. Shredding them unifies them, creating a yummy slaw-salad.
Mix 3-4 c. greens together in a bowl, such as:
1 c. cabbage, shredded
1 c. lettuce, shredded
1 c. slivered spinach, kale, chard, or beet or other greens
Optional:
1/2 c. snipped carrot tops, slivered Italian parsley or celery leaves
1/4 c. snipped herbs of your choice
Whisk together this vinaigrette, or other dressing of your choice, and toss into salad:
1-2 tsp. minced mild onion
1 tsp. lemon juice
2 Tbsp. olive oil
1/2 tsp. honey, optional
Salt and pepper
