Tomato Vinaigrette

This not only a delicious salad dressing, but is wonderful poured over smashed, steamed potatoes or over grilled fish.
1 medium tomato
1½ Tbsp. sherry or red wine vinegar
3 Tbsp. olive oil
Salt and pepper
Puree the tomato and vinegar in a blender until smooth.
With machine running, slowly drizzle in the olive oil.
Season with salt and pepper.
