Chicken, Kale, and Lentil Dinner Bowl

I love kale and lentils together. Add chicken, and it's even better. This is no-frills, yet satisfying- an extremely quick and delicious way to use leftover chicken to make another meal.

1 cooked/roasted chicken breast (skin removed, and shredded or cut in bite sized pcs.)

Olive oil

2 Tbsp. finely minced onion

1/2 tsp. dried thyme, (or a fresh sprig, removed before serving)

Salt and pepper

1 small bunch kale, stems removed and rough-chopped

1 can (15-16oz.) lentils, rinsed and drained

Saute onion in 2 tsp. olive oil about 2-3 minutes, until soft. Stir in thyme and season with salt and pepper. Add kale and cook, stirring often, until wilted-about 2-3 minutes. Transfer to a bowl.

Add 1 Tbsp. olive oil, chicken, and the lentils to the emptied saute pan. Season with salt and pepper. Cook and stir until heated through, about 30-60 seconds.

Combine in the bowl with the kale mixture and serve.
