Kale Pasta Bowl

I love the simplicity of this yummy and comforting dish.
1 Tbsp. olive oil
1-2 cloves garlic, minced or pressed
1-2 Tbsp. minced onion
2 c. chopped tomatoes (or 1-15oz. can diced tomatoes)
4-6 c. rough chopped kale leaves
1/4 c. snipped basil leaves
1/2 lb. spiral or rotini pasta
2 c. water
1/4 c. grated Parmesan
Salt and pepper
Saute the garlic and onion a couple of minutes, until soft and aromatic, and JUST starting to brown. Add the kale, basil, pasta, water and a few dashes of salt. Simmer until the pasta is cooked al dente. Add a little water, if you wish, to get to your desired consistency.
Stir in the Parmesan, season, and serve.
