Two Asian Style Coleslaws


Two tasty slaws!

Coleslaw:

Combine in a bowl:

3 c. shredded cabbage

2 Tbsp. finely sliced green or red onion

1 carrot, matchstick-cut, or shredded

(add other thinly sliced vegetables if you like, such as radish, kale, kohlrabi, peppers)

Two Asian Dressing Options:

Soy Ginger Dressing

Whisk together and toss into salad:

1 Tbsp. rice vinegar (or white wine vinegar)

1 Tbsp. toasted sesame oil

1 tsp. olive oil

1 Tbsp. soy sauce

1 tsp. honey

¼ tsp. minced ginger

½ small clove garlic, minced or pressed

Peanut Butter Dressing

Whisk together and toss into salad:

1 Tbsp. creamy peanut butter

1 Tbsp. warm water

1 Tbsp. rice vinegar

1 Tbsp. lime juice

½ tsp. grated ginger

½ tsp. soy sauce

½ tsp. sriracha sauce, optional
