High-Heat Roasted Beans and Tomatoes


You may find this to be a whole new take on green beans. The high temperature makes them crinkly, caramelized -and yummy!

1/2 lb. trimmed green beans

1 Tbsp. olive oil

Salt

1 c. cherry tomatoes, halved

1/2 tsp. dried oregano

Preheat the oven to 450. Toss the beans with olive oil and season with a dash of salt. Roast on a baking sheet (parchment lined if desired) for 6-8 minutes, until they begin to soften. Shake once or twice during roasting time. Season the tomatoes with oregano and a dash of salt and toss onto the baking sheet; roast another 4-5 minutes or until the beans are browned and the tomatoes have shriveled.
