Skol Vikes! Purple Cabbage Slaw

This brightly hued cabbage always seems to come just when Minnesotans are starting to think purple!

Simple and tasty.

1/2 medium-large head purple (red) cabbage

1 medium carrot, shredded

zest of 1/2 lemon

3 Tbsp. lemon juice

3 Tbsp. olive oil

1-2 Tbsp. honey (to your taste)

Salt and pepper to your taste

Remove any tough outer leaves from the cabbage, then trim the core and any tough stems from the cabbage and thinly slice. Add to a bowl with the shredded carrot, lemon zest, lemon juice, olive oil, honey, salt and black pepper. Toss to combine.
