Cantaloupe Ribbons Salad

I like cutting the melon into ribbons for this salad; makes it seem fresher and lighter to me- but the flavor would be just as delicious if you cut the melon into wedges or cubes.

Greens

1/4 cantaloupe, flesh removed from rind and seeded

1-2 Tbsp. snipped mint leaves

2-3 Tbsp. crumbled feta or other soft cheese

1 Tbsp. lime juice

1 Tbsp. olive oil

1-2 tsp. honey, to your taste

Place greens in salad bowl.

Shave ribbons of cantaloupe using a vegetable peeler or mandolin over the greens. Sprinkle with mint leaves and cheese.

Whisk together lime juice, olive oil; toss into salad gently.
