Fiesta Potato Salad

This is a very colorful, fun, and tasty salad.

Combine in a large bowl:

2 –3 c. new potatoes, cut bite-sized and steamed to firm-tender

1 c. green beans, trimmed to 2” pcs. (steam to firm-tender if desired)

1 c. zucchini/summer squash, cut bite-sized (steam to firm-tender if desired)

2 Tbsp. sweet yellow, green, or red onion

1 c. cherry tomatoes, halved or quartered

Whisk together:

1 clove garlic, minced

2 tsp. Dijon mustard

2 tsp. red wine or apple cider vinegar

2 tsp. lime juice

1/4 tsp. cumin (+/- to your taste)

Salt and pepper

2 Tbsp. olive oil

1 Tbsp. fresh oregano or marjoram

Toss together lightly. Garnish with minced hot peppers if you like it spicy!
