Cucumber Avocado Salad


This recipe combines cool summer vegetables with a hint of spicy heat.

Combine in a bowl:

2 c. 1/2" diced cucumbers (peeled)

1 avocado, peeled and 1/2" diced

1/2 c. sliced celery

1/4 c. packed, snipped basil leaves

Whisk together:

1/8 tsp. minced or grated fresh ginger

1/2 sm. clove garlic, minced or pressed

1 tsp. honey

1 Tbsp. lime juice

1 Tbsp. light vegetable oil

Salt

Taste, and add garlic, ginger, (and a little minced hot pepper if you like), to your liking.

Toss vinaigrette with vegetables and serve.
