Tomato, Cucumber, and Basil Salad

Simple is always "just right", especially when you're using the very freshest ingredients.

Combine in a bowl:

1 medium-large tomatoes, cut into small wedges (use heirlooms if you can)

1 medium cucumber, peeled and cut into thick slices- then quarter slices into bite-sized "chunks"

2-3 Tbsp. red or green onion, thinly slivered

1/4-1/3 c. fresh basil leaves, snipped finely or ribbon slivered

Whisk together and add to vegetables:

1 Tbsp. olive oil

1 Tbsp. red wine vinegar

Juice from 1/2 lime

Season with salt and pepper, add 1/2 c. crumbled feta or goat cheese, and toss well.

Variation:

Tomato, Cucumber & Basil Caprese Salad

Arrange alternately on a platter:

  • Tomato slices (heirlooms are wonderful for this salad)

  • Cucumber slices

  • Fresh, whole mozzarella slices

Lightly drizzle with olive oil, and balsamic vinegar (or lemon juice, in a pinch).

Sprinkle amply with fresh, snipped basil leaves.
