Cucumber Mint Quinoa Salad

This salad is essentially a variation of tabbouleh. Quinoa is incredibly high in protein, plus it has lots of calcium and iron. Light, mild, and low cal, yet it's extremely filling; this is a wonderfully refreshing summer salad that we love for it's flavor and simplicity.
Combine:
3 c. cooked quinoa
1 c. cherry tomatoes, cut in half (or 1 c. diced tomatoes)
1 medium cucumber, peeled and diced
1 Tbsp. sliced green or red onion
¼ c. mint, finely chopped
½ c. chopped sweet bell pepper, optional
Whisk together and lightly toss into the veggies:
2 Tbsp. red wine vinegar
1 Tbsp. olive oil
½ - 1 tsp. honey, to your taste
Options:
1) A splash of orange juice and a quick grate of orange zest is quite a tasty addition!
2) If you have no mint- substitute with dill, chives, cilantro, tarragon, parsley, or a blend of these herbs. It's transformed to a new salad!
3) Sprinkle with 1-2 Tbsp. crumbled feta
