Chioggia Beet Carpaccio

Usually a carpaccio is rounds of razor thin meat, piled with greens and cheese.

Create your own stunning Chioggia Carpaccio by arranging very thinly sliced Chioggia beets on individual plates or a serving platter. Scatter with thinly shredded greens, snipped herbs and crumbled goat or feta cheese. Then, drizzle with the sweet citrus vinaigrette below, or another of your choice.

Add optional minimalist quantities of shaved, peeled or shredded carrot and/or radish if you wish.

Sweet Lemon Vinaigrette:

2 Tbsp. olive oil

2 tsp. lemon juice

1 tsp. honey
