Grated Beets with Star Anise

Star anise is a licorice flavored spice, an excellent pairing with beets!

About 3-4 small-medium raw beets, scrubbed

1 Tbsp. apple cider vinegar

1/4 tsp. salt

1 Tbsp. minced mild onion

1 tsp. honey or maple syrup

1/2 tsp. crushed or powdered star anise

2 tsp. olive oil

1/2 tsp. anise seeds, optional

Large-grate the beets into a bowl. You want to end up with about 2 cups.

Whisk together all the other ingredients, and toss with the beets.

Chill before serving.
