Pear & Celery Salad


This reminds me of the sort of "vintage" luncheon salad I enjoyed at the Fountain Room in Young Quinlan's Department Store- a 9th and Nicollet institution of a bygone era. Kind of mild and sweet, but cool and delicious, in a comforting, Midwestern sort of way. Gloves were not required at the Fountain Room, but I often wore them. Sometimes there'd be a fashion show going on, with models milling around us. Anyone besides me still have gloves in their dresser drawer?

2 stalks celery, cut in 1/2” slices

1 Tbsp. apple cider vinegar

1 Tbsp. honey

Dash of salt

1 ripe pear, diced

1/2 c. finely diced white cheese

1/4 toasted, chopped pecans

Large lettuce leaves, optional

Whisk together vinegar, honey and salt. Gently blend in diced pears first and next the cheese and pecans. If you wish to stay true to it's vintage heritage, serve on a bed of lettuce leaves.
