Cinnamon Apple-Squash Bread


I got this recipe from my mother-in-law. Delicious!

Preheat oven to 350. Grease and flour a 9x5 loaf pan.

Combine in a bowl:

1 c. pastry or all-purpose flour

3/4 c. whole wheat flour

1 tsp. baking soda

2 tsp. cinnamon

1/2 tsp. ginger

1/4 tsp. allspice

1/2 tsp. salt

Combine in a large bowl and beat with a hand mixer for 3-4 minutes:

1 c. pureed plain squash, or pumpkin

2 eggs

2/3 c. unsweetened applesauce

1/3 c. maple syrup

3 Tbsp. vegetable oil

1 tsp. vanilla

Fold the dry ingredients’ mixture into the wet ingredients’ mixture.

Pour the batter into the prepared pan and sprinkle with 2-3 Tbsp. chopped, toasted pecans. Bake 45-60 min, or until inserted toothpick comes out clean
