Sauteed Apple-Cherry Kale

Next time you make bacon for breakfast, save the fat and use for this tasty and easy autumn dish!

Note: though not quite as decadently yummy, you can substitute olive oil for bacon fat- it's still great.

2 Tbsp. bacon fat

1/8 c. thin red onion slivers

1 apple, peeled and thin-chopped

1 bunch kale, stems removed and rough-chopped

1 c. dried cherries

1/4 c. apple cider

1 tsp. apple cider vinegar

Saute the onion in the bacon fat about 3 minutes, until softened. Stir in apples and cook until tender, about 3-4 minutes more. Add the kale and cook until just starting to wilt, about 1 minutes.

Stir in cherries and cider and simmer on low until liquid has evaporated, about 5 minutes. Drizzle with the vinegar, toss and serve.
