Winter Squash Salad Dressing

When making a dish with pureed squash, scoop out a couple of spoonfuls and set aside to make this yummy salad dressing. Delicious on a kale salad.

Whisk together:

2 Tbsp. pureed plain squash or pumpkin

2 Tbsp. white wine vinegar

2-3 tsp. honey, to your taste

3 Tbsp. olive oil

Thin with a little water if needed/desired.
