Stove Top Cabbage Dinner

This is an old-fashioned, farm style recipe.
1 lb. organic ground beef
½ c. chopped onion
1 small clove garlic, minced or pressed
1 small head cabbage, shredded
2 c. diced tomatoes (or 14 oz. can)
1 c. tomato or pasta sauce
Salt and pepper
In a large skillet, thoroughly cook ground beef. Add onion and garlic, and continue cooking another 1-2 minutes.
Add cabbage, tomatoes, and tomato sauce. Season with salt and pepper.
Cover and simmer about 10-15 minutes until the cabbage has softened.
Variations:
Add 1 c. water and ½ c. rice at the same time you add the cabbage and tomatoes. May take a few minutes longer for rice to fully cook.
Add ½ c. shredded Colby or cheddar cheese once cabbage has softened. Re-cover for a couple of minutes until the cheese has melted.
