Easy Skillet Apples & Onions

Hurray for the apple season! This dish is terrific as a side with pork chops or a pork tenderloin.
3 medium apples
2 Tbsp. bacon fat –yummy; or olive oil is ok too
1 medium onion, thinly sliced into 1/4” thick rings or half moons
Salt
Brown sugar, optional
Core the apples (don’t peel), and slice into 1” thick rings
Heat a heavy skillet over medium-high heat and saute the onion in 1 Tbsp. bacon fat until aromatic and softened. Season with salt. Push the onions to one side, turn up the heat and add the other 1 Tbsp. bacon fat and apples.
Season with salt and a sprinkling of brown sugar if you are using.
Cook, stirring often, about 4-5 minutes or just until the apples are firm-tender.
Toss the onions and apples all together and serve warm.
Autumn Tip: whenever you make bacon at this time of year, save your fat and USE IT! It keeps for about a week in the refrigerator. Fabulous flavor that's a welcome addition when sauteeing and to so many fall favorites such as braised greens, potato hash; I've even added a little to savory biscuit dough- yum!
