Garlic-Ginger Broccoli & Winter Squash Medley


Very good as a side, or serve over rice for a more complete meal.

2 Tbsp. olive oil

2 c. small-diced winter squash

1 clove garlic, finely minced or pressed

1/4 tsp. ground ginger

2 c. small broccoli florets

1/2 c. chopped celery, including leaves

2 Tbsp. green or mild onion, very thinly sliced or minced

1 Tbsp. lemon juice

2 tsp. honey

Saute the squash, garlic and ginger in olive oil over medium-high heat for 3-4 minutes, or until the squash is just beginning to soften. Add the broccoli, celery and onion and continue cooking another 2-4 minutes, until the squash and broccoli are both firm-tender.

Transfer to serving bowl. Whisk together the lemon juice and honey and adjust as needed to your taste. Toss with vegetables and serve.
