Farm tables often include bowls of radishes to be enjoyed with butter and salt.
Serving the radishes with seasoned salts will make this staple a uniquely special appetizer. Try with the spices below, or with other of your favorites. You could also season your butter with a little garlic or spice of your choice.
1 bunch small radishes, or 1-2 large Daikons, trimmed/leaves removed
3-4 Tbsp. butter
3/4 c. coarse salt
1 Tbsp. whole fennel seeds
1 Tbsp. whole cumin seeds
1 tsp. cayenne pepper
1 tsp. paprika
3 Seasoned Salts:
Toast fennel seeds in a dry skillet over medium heat, shaking pan continuously, until aromatic, about 4 minutes. Transfer to a spice grinder; grind until seeds are no longer coarse.
In a small mixing bowl, stir ground fennel seeds into 1/4 cup coarse salt; transfer to a small serving bowl.
Wipe out mixing bowl, and repeat by combining cumin seeds with 1/4 c. coarse salt- then transfer to another small bowl.
Wipe out mixing bowl, then stir paprika and cayenne pepper into 1/4 cup coarse salt; transfer to a third small bowl.
Transfer softened butter, (combined with any optional seasonings), to a fourth bowl.
Arrange radishes on a serving platter, with serving bowls around them.
