Maple Roasted Vegetable Medley


2 cups sweet potatoes, sliced into 1/2-inch rounds

2 cups broccoli or cauliflower florets

2 cups Brussels sprouts, halved if large

2 Tbsp. butter

Salt and peppper

2 Tbsp. maple syrup

Preheat oven to 400°F.

Combine sweet potatoes, cauliflower and Brussels sprouts.

Melt butter, whisk in maple syrup, and season with salt and pepper. Pour over vegetables and toss together.

Roast in oven until tender, about 30-40 minutes, stirring halfway through.
