Sweet Potato Skin Fries

Don't discard those tasty, and nutrient-rich skins! Awesome use of "leftovers"!
Skins from 2 sweet potatoes (with some flesh left attached on the inside walls)
1 T. olive oil
1/2 tsp. crushed dried rosemary
1/4 tsp. dried thyme
1/4 tsp. dried sage
Salt and pepper
Grated parmesan
Preheat broiler. (Place rack about 6” from heating element)
Cut the skins into 1/2” wide strips, and place in a large bowl.
Whisk together the olive oil, herbs, salt and pepper; then toss with the potato skins until all are coated. Use a pastry brush if needed to complete.
Place onto a foil lined baking sheet, sprinkle with cheese, and broil about 5 minutes, or until the skins start to brown and turn crisp. Serve warm.
