Sweet Potatoes and Chili Tomatoes

This is a very simple and basic, African cuisine inspired recipe that is tasty on its own, or you can adapt to your taste by adding other spices and/or veggies– onions, peppers, zucchini, whatever you have on hand. Perfect with corn bread, and a great way to use up those leftovers!

2 firm-tender roasted sweet potatoes, peeled, cooled and cubed

2 medium tomatoes, large diced

2 tsp. olive oil

1/2 T. butter

1/4 tsp. chili powder

Salt and pepper to your taste

Combine the olive oil, butter, chili powder, salt and pepper in a skillet, and saute the sweet potatoes over medium-high until they begin to brown, about 5 minutes.

Add the tomatoes, lower heat and simmer another 4-5 minutes until warmed through and flavors have melded.
