Peanut Chicken Stir Fry with Snap Peas

1 skinless, boneless chicken breast, cut into strips

2 tsp. peanut oil

1-2 cloves garlic, pressed or minced (to your garlic palate)

1 hot pepper, thinly chopped

2 c. trimmed snap peas

Salt and pepper

2 Tbsp. lime juice

2 Tbsp. coarsely chopped roasted peanuts

⅓ c. snipped fresh basil

In a large skillet cook the chicken in the oil over medium-high heat for about 3-4 minutes, until nearly fully cooked, stirring to brown on all sides . Add the garlic, hot pepper and peas. Continue cooking until the chicken is fully cooked and peas are crisp tender- another 1-2 minutes. Season with salt and pepper to taste. Stir in lime juice, peanuts and basil and serve right away.
