Sesame Chicken and Greens Salad

Light and tasty!
1-2 carrots, shaved with vegetable peeler into long ribbons or shredded
4 c. kale leaves, spinach, chard, or lettuce- shredded or cut into ribbons *see below
2 Tbsp. thinly sliced green onion, or red onion slivers
1 Tbsp. toasted sesame seeds
1 cooked chicken breast, shredded or torn into bite-sized pieces (leftover rotisserie is good)
1/4 tsp. grated fresh ginger
1 Tbsp. tamari or soy sauce
1 Tbsp. rice vinegar (or other mild vinegar)
2 Tbsp. sesame oil
In a large bowl, combine the carrots, greens, onion, sesame seeds, and chicken.
Whisk together the ginger, tamari, vinegar and sesame oil; toss lightly with veggies and chicken.
*If using kale, massage the leaves with 1/2-1 tsp. olive oil for about 1 minute, using your hands -this will nicely soften kale.
