Shredded Bok Choy Slaw

Tasty side slaw alongside, or atop, fish, chicken, or burger.
1/2 head bok choy, thinly sliced or shredded

1 shredded carrot

1-2 green onion, thinly sliced

Whisk together and toss into the vegetables:

1 Tbsp. rice vinegar

1 tsp. toasted sesame oil

1/2 tsp. honey

1/2 tsp. Dijon mustard

Salt and pepper to taste
