Baked Oatmeal Bars


A huge favorite at our house. We often eat oatmeal for breakfast, but this really fits the bill when we want just a little bit of a treat. Individually wrap and freeze leftover bars for future treat mornings- or an afternoon snack! We usually add dried cranberries, but chopped apples or fresh berries are yummy too. It's also delicious with no fruit or nuts.

2 c. oatmeal

1½ tsp. baking powder

½ tsp. salt

Scant ½ c. brown sugar

1 tsp. cinnamon

½ c. unsweetened applesauce

1 c. milk

1 egg

1 tsp. vanilla

2 Tbsp. melted butter

¾ - 1 c. dried cranberries

¼ - ½ c. walnuts, optional

Yogurt for topping

Preheat oven to 325, and grease an 8 x 8 square pan.

In a large bowl, combine first five dry ingredients. In another bowl, whisk together the next five (wet) ingredients, then stir into the dry mixture. Add fruit and nuts if using.

Pour into the prepared pan. Bake for 40-45 minutes, or until it is golden brown.

Serve warm, topped with yogurt.
