Farm Beets

This recipe comes from my Norwegian Great-Grandmother, Natalie.
The note on her recipe card, (dated 1926), says “If we have bacon, remember to add it!”
2 Tbsp. butter
2 Tbsp. flour
1 Tbsp. sugar
½ tsp. salt
¼ cup vinegar
¼ cup cream (or ½ & ½)
3 cups grated, cooked beets
1 Tbsp. paper thin, tiny onion slices, or scraped onion juice (optional)
2 pieces bacon, crisp cooked and crumbled (optional)
Melt butter in a saucepan. Whisk together flour, sugar, salt, vinegar and cream, and add to butter. Fold in beets (+onion if using) and simmer gently for about 5-10 minutes until hot. Serve warm, sprinkled with bacon- if using.
