Ground Cherry Salsa
This is a tasty way to enjoy ground cherries! Adjust quantities to your liking.
2 c. ground cherries, halved or quartered
2-3 Tbsp. thinly sliced or minced red/mild onion
½- 1 c. chopped sweet bell pepper
¼ jalapeno pepper, chopped -optional, if you like it hot
2-3 Tbsp. snipped/chopped cilantro (salsa is still good if you don't have any on hand)
2 Tbsp. extra virgin olive oil
1-2 Tbsp. lime juice
Combine all ingredients and season lightly with salt. Allow to sit for 30 minutes before serving so flavors can meld.
Other yummy additions:
½ c. chopped peach or mango
¼ c. chopped cucumber is a nice addition
