The classic version of this refreshing appetizer has a layer of seasoned cream cheese on the bottom, then is topped with hummus and veggies. This is a lightened variation, I've replaced the cream cheese with a layer of seasoned plain yogurt, moved to the top of hummus. Still a fabulous appetizer with a combination of winning flavors- it never fails to please!
Spread onto an 8-10" shallow baking dish, or serving platter/plate with raised edges
1-1½ c. plain, red pepper or garlic hummus
Whisk together and spread over hummus:
1 c. plain Greek yogurt
1 tsp. lemon juice
1 Tbsp. snipped fresh dill (+/- to your taste), or use 1 tsp. dried dill or Italian seasoning
1 clove garlic, pressed or minced (or a few good shakes of garlic salt/powder)
Top with layers of the following ingredients, one at a time:
(quantities are approx. -adjust to your liking)
1 c. chopped cucumber
1 c. chopped tomato
¼ c. chopped Kalamata olives
¼ c. chopped green or red onion
¼ c. crumbled feta cheese
Cover and refrigerate for at least an hour or two before serving- up to 24 hours ahead.
Serve with pita chips.
