Chicken Asparagus Salad with Creamy Tarragon Dressing

Light and tasty dinner! Tarragon is terrific in a spring salad.
Whisk together the dressing ingredients and refrigerate:
3 Tbsp. buttermilk
1 Tbsp. mayonnaise
1 Tbsp. olive oil
1 Tbsp. dried tarragon
1 tsp. Dijon mustard
1/2 tsp. lemon juice
Salt and pepper to taste
Toss together the salad ingredients in a large bowl:
4 c. salad greens
1-2 c. watercress (trim off larger stems) and/or radish greens
1 c. chopped or torn cooked chicken
1 1/2 c. asparagus, cut into 1" - 2" pieces
2-3 radishes, thinly sliced
2 Tbsp. sliced almonds
1/4 - 1/2 c. crumbled goat cheese or feta, optional
Toss with dressing and season with salt and pepper to your taste.
