Irish Champ

Champ is a streamlined, simplified Colcannon: Traditional Irish mashed potatoes mixed with cream/milk and chopped green onions -without cabbage or greens. Delicious!
3 lbs. peeled potatoes, halved or quartered
1 cup milk
1 cup chopped green onions
6 Tbsp. butter, melted and kept warm
Salt and pepper
Boil the potatoes in salted water until soft.
When potatoes are nearly done, bring the milk to a very low simmer in a saucepan.
Drain potatoes and mash thoroughly.
While mashing potatoes, toss onions into milk to get them warmed.
Add warm milk and onions to the mashed potatoes, along with half the melted butter.
Season with salt and pepper to taste.
Pile the potatoes into your serving dish, make a dent in the center, and pour in the remaining butter- creating a “butter puddle”, as my Irish grandmother would say!
